Checking Out — Making Cookies

These delicious “cookies” a friend of mine made recently — eat one and, I’m not kidding, you’ll want ten more — resemble a not-too-sweet bon-bon with the texture and taste of a brownie, covered in a “crispy” chocolate crust.

I thought they’d take hours to make, but no:

1 pkg Oreo cookies (we used regular, but I bet it would be awesome with the mint ones or even the PB ones depending on your taste)
1 pkg cream cheese
1 box of bakers chocolate (again, we used regular, but looking back, white chocolate would have been amazing!)

Process cookies in blender or food processor until fine. Using hands, mix the cookie crumbs with cream cheese until you can no longer see any white. Form a large ball to pull from. Pull off small pieces and form into a ball. It’s best to have one person doing this part and a second pair of hands to melt the Baker’s chocolate and dip the balls in to cover. Place on waxed paper and place in the freezer overnight to harden.

Make some.  Guaranteed.  You’ll love them.

    Do they need to be kept refrigerated after the freezing? Or did you eat them frozen?

    ChrisH -

    No, don’t eat them frozen!

    My friend froze them overnight and then kept them at room temperature. But, after I saw the ingredients — that they contained cream cheese — I thought they should be kept refrigerated. So, I guess what I’m going to do is bring them to room temperature before eating/serving but otherwise, I’m going to keep them in the frig.
