Slate Discovers Romas as Best Tomatoes for Tomato Sauce

You’d think this was a joke, or something from The Onion, but no. Benjamin Phelan over at Slate has an article out, posted today, titled:
Awesome Sauce
The right kind of tomato to use in your tomato sauce.
I don’t think I’m being arrogant or hoity-toity to say, really? This is new news? Far as I know, Roma tomatoes have been the tomatoes of choice for making tomato sauce for a couple hundred years.

Papa Murphy’s actually advertises putting ROMA tomatoes on their Classic Italian Combo T & B pizza. What’s so different (or great) about Romas other than their small size and funny shape? It’s lost on me.

Romas have more “meat” to them and less water.
